Chicken ‘n’ Seafood


This dish makes me so happy and so sad all at the same time. This is a meal I used to order at one of my favorite local eateries in Iowa, especially when I took my niece there for lunch. This was our go to lunch indulgence! I always have happy memories when I make this except now. I am missing my Ri! She’s in a hospital on bed rest waiting to deliver a beautiful baby boy and I am just sad I can’t be there for her. Ri and I never looked alike, we had different interests, she would call me Aunt Brownie and I would call her yellow cake,  but despite our differences, we had a special bond and favorite little things that her and I would do alone, like going out to lunches, going shopping, spending time on mini trips that were ALWAYS

full of driving adventure, and knowing that we can always lean on each other no matter what. I am so proud of the beautiful, accomplished young woman she has become, and despite her protest, she will always be my yellow cake 🙂 This is for you Ri and I promise to make it for you as soon as I get back home!


2 b/s chicken breasts cut in half

4 thick slices of italian bread

shredded real or fake crab

salt and pepper to taste

1 1/2 teaspoons of paprika

olive oil


Hollandaise sauce ( I use Knorr)



This can be made on the grill or in the oven/stove and it is so simple to make you can do it all year long!

I find it much easier t do on the grill though 🙂

Season chicken breasts with s and p and paprika on both sides.

If pan frying/sauteing use 2 TBS of olive oil and sear on med high then turn down to med/low to cook through.

If grilling, add olive oil after seasoning and grill until cooked through.

Let the chicken rest and then grill or bake bread slices. All I do is coat the slices with butter.

Make hollandaise sauce.

Layer bread, chicken, sauce, and then top with shredded crab and you are done!

*I usually serve with asparagus.
