Okay, so MAYBE this isn’t the breakfast of champions but it’s OH SO GOOD !!! This is one of the very first foods I made for my sister and myself probably starting when I was 10-11 years old. I found the recipe in an old Betty Crocker cookbook (you know-the best ever cookbook with the red and white checkered cover) when my sister and I were hungry one morning. My mom had a penchant for sleeping in on weekends and my sister and I were up at the crack of dawn to watch Saturday morning cartoons 🙂 Well, starving as we were, I found the cookbook and this is something we had the ingredients for. So, off I went making it! To my disappointment we didn’t have syrup so I found some maple extract and made my own to go with it (recipe coming sometime soon)! This soon became one our favorites and I always think of my sister and I whenever I make this and I hope she does too 🙂
6-7 slices 3/4″ thick Italian Bread
(this is what I had left over but regular bread will work just fine)
3 eggs +1 for “surprise”
1 cup milk
1 TBS sugar
3/4 TBS cinnamon
1 TBS vanilla extract
If adding an egg to the center..use a biscuit cutter to cut a hole out of the center of the bread before dunking ! Add egg to the center of the bread after first flip, then flip again to cook through 🙂
Whisk together eggs, milk, cinnamon, vanilla, and sugar.
Dunk bread in mixture and grill at 350 degrees on a skillet.
Top with syrup 🙂
