A very simple recipe for quick and easy salmon that combines some of my boyfriend’s favorite seasonings. It’s quick to make and so easy to clean up! I was able to use a lot of the herbs fresh from my container garden which is so convenient! No running to the store to grab parsley and other herbs 🙂 Now, if I could only grow lemons in the midwest and if he could only fish salmon out of our lake we would be all set 🙂 I included before and after photos on this dish so you could see the difference in color, and as always, want to remind you to use a thermometer to make sure it is cooked to the proper temp! Once I tried the flake test to only get my fish raw in the center 🙁 We decided to serve this with sweet potatoes and to wash it down, a refreshing Mountain Dew Margarita! 1 lemon (1/2 sliced and half juiced)
1/8 to 1/4 cup honey
Fresh Parsley chopped
1/2 stick of butter
S & P
Preheat oven or grill to 350 degrees
Place salmon on a piece of foil large enough to fold and completely cover
Add slices of butter, juice of 1/2 lemon, salt and pepper, chopped parsley, lemon slices and drizzles of honey on top of salmon
Fold foil tightly and bake 15-20 minutes until fully cooked.
Drizzle more honey if desired when done
